If the symbol is crossed out, then that level doesn't have any to find. If the symbol is greyed out (like this extinguisher and constellation are), then you have at least one you still need to find. If the symbol is white, you've 100%ed this level for that category. Other easter eggs do not show up here, making them hard to track.
